Quick Fish Curry

    Hi There
    Came across this simple curry recipe which is Thai in style but adaptable!

    Serves 4
    Ingredients
    750g firm white fish,chopped coarsley
    1 long red chilli,chopped finely
    1 tablespoon lime juice
    1/2 teaspoon salt
    1 tablespoon veg.oil.
    1 med.brown onion sliced thinly
    1 tablespoon finely grated ginger
    2 cloves crushed garlic
    1 tablespoon mild curry paste
    140ml can coconut cream
    1/4 cup coriander leaves
    1 lime cut into wedges

    Method
    Toss fish in combined chilli,juice and salt
    heat oil,cook onion,add ginger,garlic and curry paste
    Add coconut cream,bring to boil,reduce heat,simmer till sauce thickens
    Add fish,cook covered for 5 mins.
    Sprinkle with coriander leaves and add lime wedges.
    Enjoy

    Chicka,
    Made this a few times with some flatty tails, absolutly delicious, quick and easy. Toned down the lime a bit and cranked up the curry a bit. ;)

    Yeah it's a nice simple recipe you can adapt.Good to see your reading back over the old posts.There's some good threads on all kinds of info!
