Salt & Pepper Squid

    I am looking for a recipe for salt & pepper squid,c`mon Nat i know you would have one there somewhere.

    Hmmm, actually I have - what a surprise!

    Deep-fried Squid with salt and pepper mix​


    I haven't made Salt and Pepper Squid for a long time but this recipe used to be my favourite and made it up myself. This is how I used to make it.

    I would start with the tube. Cut into inch wide strips and diamond score each piece using a sharp knife. Put in the fridge while preparing the rest.
    You will need (all approximate, depending on how peppery and salty you like it):

    2 tbsp of sea salt
    1 tbsp of red peppercorns
    1 tbsp of black peppercorns
    half tsp dried chilli flakes
    1 tbsp corn flour

    Method

    Mix salt and peppercorns in a frypan (medium heat) and toast for about 4 minutes until crisp then add the chilli flakes.

    Once cooled, crush to a coarse powder.

    Now place half the mixture into a large bowl and add the corn flour. Toss the squid in the pepper mix to lightly coat.

    Fry in hot Olive Oil in batches for approx 2 minutes and drain on a paper towel.

    Place on a platter, sprinkle the other half of the pepper mixture over the cooked squid and serve with lemon slices. Serve warm, not hot.
    Enjoy with a glass of a fruity, crispy, chilled white wine - Riesling.
    It's nice served cold too with a green salad and potato salad :D

    If you are going to serve it with a green salad, pour some mango juice on the lettuce to enhance the flavour and quite refreshing.

    Just wanted to let you know Nat,tried this on the weekend and it worked great.I only left one thing out that was the chilli because im not a chilli lover but i was very happy with the result and will use this recipe again in the future.

    This is a good find for me!!! I love salt and pepper squid but could never make it right, Will definitely try this. All of a sudden I just had a craving...

    Reviving an old thread I know but... I bagged out on squid over the weekend... gave a few away, made paella from some and had mates over for dinner.. but have a couple left so I'll definitely give this recipe a try. Cheers.
